From Persian تاج خروس (tâj xorus, amaranth, literally cockscomb-like flower), from Middle Persian [script needed] (hlws /⁠xrōs⁠/, cock, rooster, literally the caller) + [script needed] (tʾg /⁠tāg⁠/, crown, tuft, comb), from its appearance; cognate with Jewish Palestinian Aramaic ירבוז (yarbūz, strawberry blight) and Middle Armenian բարբուզան (barbuzan).
