1:1 Any [Jewish] person may cut [the throat] and the slaughter is halakhic except a deaf person, an insane person, or a minor, otherwise they may ruin [the cut] in the act of slaughter. But all of them who cut [the throat] while others [are] watching them, the slaughter is halakhic. The slaughter of the gentile [is halakhically] carrion and makes impure by carrying [it]. One who cuts [the throat] at night and also a blind person who cuts [the throat], their slaughter is halakhic. One who cuts [the throat] on Sabbath or on Yom Kippur, even though his life is against the mouth of the living, his slaughter is halakhic.
