sodium aluminium phosphate (plural sodium aluminium phosphates)
- (inorganic chemistry) An ionic compound made up of aluminium cations (Al3+), sodium cations (Na+), and phosphate anions (PO43-) in the ratio of 1:3:2, respectively. Other ratios are possible and some combinations also contain hydrogen and/or water molecules and/or HPO42- as well. It is used in baking as a leavening agent for making sponge cakes, crumpets.
