Probably borrowed from Polish zapiekanka, as the suffix -анка (-anka) is unrelated to Polish -anka. Related to запяка́ць (zapjakácʹ, “to bake”) and запячы́ (zapjačý). Compare Ukrainian запіка́нка (zapikánka).
